Mushroom-Walnut Pate

Ingredients

  • 1 cup walnuts
  • 1/2 cup shallots minced
  • 1 pound mushrooms, chopped button, cremini, shiitake, or portobello
  • 2 cloves garlic minced
  • 1 tsp thyme leaves
  • 1/2 tsp pepper
  • 1/2 tsp salt

Instructions

  • Spread the walnuts on a baking sheet and toast for 10 minutes at 350°, until they are lightly browned and fragrant.
  • Sauté the shallots until soft.
  • Add the mushrooms, garlic, thyme, salt, and pepper. Cook until the liquid has evaporated.
  • Process the walnuts to a thick paste. Add the mushroom mixture and process until it's the texture you like.
  • Spoon the mixture into an oiled container. Refrigerate overnight. The pate will set up a bit more and flavors will develop.

Gooey Mozzarella Cheez

This is a quick and easy soft cheese-like spread. The essential ingredients are cashews and tapioca flour.

Gooey Mozzarella Cheez

Ingredients

  • 1/2 cup raw cashews
  • 1 cup water
  • 4 tablespoons tapioca flour
  • 1 tablespoon nutritional yeast
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon miso
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder

Instructions

  • Put the cashews into a saucepan and cover with water. Bring to a boil and simmer for 10 minutes. This will soften the cashews so they can blend completely smooth.
  • Put the remaining ingredients into a blender.
  • Drain the cashews and add them to the blender. Process until smooth.
  • Pour the mixture into a small saucepan over medium heat. Stir continually for about five minutes; it forms lumps and turns thick.
  • Can be used as a spreadable cheez at this point, or refrigerated.

Notes

The cheez will get a little thicker in the fridge but will still be soft and spreadable.

Soy Curl Fajitas

Oven-fried Soy Curl Fajitas

Ingredients

  • 4 ounces soy curls 1/2 bag, Butler soy curls
  • 3 cups vegetable broth or water very hot
  • 1/4 cup cornmeal
  • 1/4 cup nutritional yeast
  • 1 teaspoon poultry seasoning
  • 1 large onion sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 small zucchini in thin strips
  • 1 small yellow squash in thin strips
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons taco seasoning
  • 1 tablespoon Worcestershire sauce

Instructions

  • Preheat the oven to 400°F.
  • Put the soy curls into a bowl and pour the hot broth or water over them. Let soak for 5 minutes until soft.
  • Prepare the breading by mixing the corn meal, nutritional yeast, and poultry seasoning in a bowl.
  • Drain the soy curls, place in a colander and press with a spoon to push out much of the moisture.
  • Put the soy curls into a bowl and sprinkle the dry mix over them. Stir to coat the curls on all sides.
  • Cover a large baking sheet with parchment paper. Place the breaded soy curls on the baking sheet, spreading them out so they aren't touching.
  • Cook 10 minutes; turn them over and cook 10 more minutes. They should be crispy on the outside.
  • While the soy curls are in the oven, sauté the onion, peppers, zucchini, and yellow squash. Add a little water if they begin to stick. Season with Worcestershire sauce, taco seasoning, paprika, salt, and pepper.

Notes

Mix the soy curls with the vegetables and serve in a flour tortilla with garnishes like guacamole, vegan sour cream, salsa.
These oven-fried soy curls are also good in a salad, or served with fries and dipping sauces.
